Today, we are sharing with you a delicious oven-baked vegetable and herb cheese tart recipe flavored with seasonal vegetables and aromatic herbs. This practical and eye-catching recipe will grace your tables at every meal from breakfast to dinner!
Materials:
For the dough:
- 250 gr flour
- 125g cold butter (cut into small cubes)
- 1 egg
- 1 pinch of salt
- 2-3 tablespoons of cold water
For the stuffing:
- 200 g cream cheese or ricotta
- 100 gr white cheese or goat cheese
- 1 tablespoon olive oil
- 1 clove garlic (crushed)
- Fresh thyme, rosemary and basil (chopped finely)
- Salt and freshly ground black pepper
For the topping:
- 1 zucchini (thinly sliced)
- 1 red pepper (finely chopped)
- 1 handful of cherry tomatoes (halved)
- 1 tablespoon olive oil
- Fresh thyme and black cumin
Preparation Stages:
1. Prepare the Pie Dough
- Place the flour and salt in a large bowl. Add the cold butter and rub it into the mixture with your fingertips until it reaches a sand-like texture.
- Add the egg and mix well. Add 2-3 tablespoons of cold water and knead to bring the dough together.
- Wrap the dough in cling film and let it rest in the fridge for at least 30 minutes.
2. Prepare the Filling
- In a bowl, mix the cream cheese, feta cheese and olive oil thoroughly.
- Flavor the mixture by adding crushed garlic, chopped herbs and spices.
3. Shape and Bake the Tart
- Roll out the rested dough on a lightly floured surface and place it in a baking tray lined with baking paper, crimping the edges slightly upwards.
- Poke a few holes with a fork and pre-cook in a preheated oven at 180°C for 10 minutes .
4. Add Ingredients and Final Cooking
- Spread the cheese mixture onto the pre-baked tart base.
- Place thinly sliced zucchini, peppers and tomatoes on top.
- Drizzle with a little olive oil, sprinkle with fresh thyme and bake in the oven at 180°C for 25-30 minutes until golden brown.
Service Recommendation:
After removing the tart from the oven, let it rest for a few minutes and serve with fresh herbs and black cumin. You can create a perfect accompaniment with a light arugula salad.
